Asian-Style Shrimp And Lobster Salad - cooking recipe

Ingredients
    None None Dressing
    1/3 cup lime juice
    2 tbsp peanut oil
    2 tsp fish sauce
    2 tsp brown sugar
    None None Shrimp and Lobster Salad
    1 lb cooked jumbo shrimp, peeled, deveined
    4 None small cooked lobster tails, halved, flesh sliced
    1/2 lb cherry tomatoes, halved
    1 None mini cucumber, sliced
    4 None spring onions, shredded
    1 tbsp mint leaves
    1 tbsp cilantro leaves
    1 None small red chili pepper, de-seeded, finely sliced
    2 oz peanuts, crushed
    None None lime wedges, to serve
Preparation
    For the dressing, beat together all dressing ingredients in a small bowl.
    Combine shrimp, lobster, tomatoes, cucumber, onion, herbs and chili pepper in a large bowl. Toss with dressing, sprinkle with peanuts and serve with limes on the side.
