Wild Mushroom And Goat Cheese Bruschetta - cooking recipe

Ingredients
    4 None thick slices sourdough bread
    2 cloves garlic, 1 halved, 1 finely chopped
    1 tbsp extra virgin olive oil, plus additional, for drizzling
    1 lb mixed wild mushrooms, halved if large
    1/2 tsp finely grated lemon peel
    1 tbsp fresh oregano leaves
    4 oz soft goat cheese
Preparation
    Toast or grill the sourdough. Rub each slice with the cut garlic clove and drizzle with a little olive oil.
    Heat 1 tbsp oil in a large nonstick skillet on medium-high heat. Add the mushrooms and cook for 5 mins or until softened and golden. Add the garlic, lemon peel and oregano and cook for 1 min. Season with sea salt and black pepper.
    To serve, spread sourdough slices with goat cheese and top with sauteed mushrooms.
