Grilled Pork Cutlets With Pea Chutney - cooking recipe

Ingredients
    1/3 cup cashews, toasted
    4 oz frozen peas
    1 tsp fresh ginger, grated
    2 tsp lime juice
    1 1/4 cups fresh cilantro leaves
    4 None pork cutlets, fat trimmed
Preparation
    Place cashews in a food processor and pulse to fine grounds. Add peas, ginger, lime juice, cilantro and 1/4 cup water. Process until smooth and season to taste.
    Lightly spray a large frying pan with cooking oil and cook pork for 8 mins over high heat, turning halfway, or until cooked to your liking. Serve topped with pea chutney.
