Gluten Free Mini Banana And Blueberry Loaves - cooking recipe

Ingredients
    1/2 cup butter, softened
    3/4 cup granulated sugar
    1 tsp vanilla extract
    2 None eggs
    3 None ripe bananas, mashed
    3/4 cup gluten-free self-rising flour
    1/2 cup soy flour
    1/4 cup rice flour
    1/2 tsp baking soda
    1 tsp xanthan gum
    5.25 oz blueberries
    1 cup powdered sugar
    1 tbsp lemon juice
Preparation
    Preheat oven to 400\u00b0F. Grease and line base and sides of 8 mini loaf pans with parchment paper.
    Cream butter and sugar until light and fluffy. Add vanilla. Add eggs, 1 at a time, beating well after each addition. Mix in bananas. Sift together dry ingredients then add to banana mixture and mix until combined. Fold in blueberries. Distribute between prepared loaf pans and bake for 30-35 mins, until a skewer inserted in the center comes out clean. Let stand in pan for 5 mins then transfer to a wire rack to cool completely.
    Meanwhile, combine powdered sugar and lemon juice. Drizzle over cooled loaves.
