Blueberry Passionfruit Cheesecake Squares - cooking recipe

Ingredients
    8 oz graham crackers, broken
    6 tbsp (3/4 stick) butter, melted
    2 pkg (8 oz each) cream cheese, softened
    3/4 cup sugar
    2 tsp finely grated lime peel
    2 None eggs
    1/2 cup sour cream
    2 tbsp lime juice
    1 cup frozen blueberries
    1/4 cup passionfruit pulp
Preparation
    Grease a 12 x 8-inch baking pan; line bottom and long sides with parchment paper, extending the paper 2 inches above the long sides for handles.
    Process the graham crackers until fine crumbs form. Add the butter and process until combined. Press the mixture into the bottom of the prepared pan. Refrigerate for 30 mins.
    Preheat the oven to 300\u00b0F. Beat the cream cheese, sugar and lime peel in a medium bowl with an electric mixer until smooth. Beat in the eggs, one at a time. Beat in the sour cream and lime juice. Pour the mixture into the pan. Sprinkle with blueberries and drizzle with passionfruit pulp.
    Bake for about 35 mins or until set. Cool in the oven with the door ajar. Refrigerate for 3 hours or overnight before cutting into squares.
    Store the squares in an airtight container in the refrigerator for up to 2 days.
