Berry Meringue Cakes - cooking recipe

Ingredients
    2 cups butter, plus extra for greasing
    1 None lemon, zested
    3/4 tsp salt
    3 1/4 cups granulated sugar
    1 tsp vanilla extract
    8 None eggs + 5 egg whites
    3 1/2 cups all-purpose flour
    5 tsp baking powder
    1 1/2 lb small strawberries, hulled and halved
    2/3 lb blueberries
Preparation
    Preheat the oven to 325\u00b0F. Grease and line a 13 x 15 inch baking tray. Cream the butter, lemon zest, salt, 2 cups sugar and the vanilla extract. Beat in the whole eggs, 1 at a time. Fold in the flour and baking powder. Add the strawberries and blueberries. Transfer to the prepared pan and smooth the surface. Bake on the lowest shelf of the oven for 40-45 mins until a knife inserted in the cake comes out clean. Allow to cool in the pan.
    Preheat the oven to 425\u00b0F. Beat the egg whites until stiff. Gradually add the remaining sugar, whisking well between each addition. Spread over the cake and bake for approximately 8 mins. Allow to cool and cut into pieces.
