Lemon Garlic Salmon With Potatoes - cooking recipe

2 1/4 lbs potatoes, skins on
4 x 6.5 oz salmon fillets
1/2 cup extra-virgin olive oil
4 cloves garlic, peeled
1 None lemon, juiced
2 tsp small capers, drained
2 tbsp flat-leaf parsley, chopped

Preheat oven to 400\u00b0F. Cook potatoes in boiling salted water for 15 mins, or until tender. Drain and set aside to cool.
Meanwhile, place salmon in a dish. Combine oil, garlic and lemon juice in food processor, season to taste and blend until smooth. Pour marinade over the salmon and turn several times to coat. Cover and refrigerate for 20-30 mins.
Lightly grease a baking dish. Peel potatoes, slice about 1/2 thick and arrange in 1 layer in the dish, slightly overlapping. Brush with marinade and top with half of the capers. Place salmon on potatoes, brush over any remaining marinade and top with remaining capers. Bake for 15 mins, or to desired doneness. Top with parsley and serve from the dish.
