Grilled Chili Shrimp And Noodle Salad - cooking recipe
Ingredients

3 oz bean thread noodles
2 lbs medium shrimp, raw
1 tsp finely grated lime zest
1 clove garlic, crushed
1/2 inch piece fresh ginger, grated
2 tbsp sweet chili sauce
2 tbsp lime juice
1 tbsp fish sauce
1 None small red pepper, sliced thinly
1 None medium carrot, cut into matchsticks
1 None small red onion, sliced thinly
2 cups snap peas, sliced thinly
1/2 bunch fresh cilantro leaves
Preparation

Place noodles in medium heatproof bowl, cover with boiling water and let stand until tender, drain.
Meanwhile, shell and devein the shrimp, leaving tails intact. Combine the shrimp, lime zest, garlic, ginger and half the sweet chili sauce in medium bowl and let sit for 15 minutes. Cook shrimp on heated oiled grill or grill pan until they change color and are cooked through.
Combine shrimp, noodles, remaining sweet chili sauce, lime juice, fish sauce, vegetables and cilantro in large bowl and season to taste.
