Rice Pudding With Apple And Pear Compote - cooking recipe

2 1/2 cups milk
1 tsp grated lemon zest
2/3 cup uncooked short-grain rice
2 None apples, peeled, cored and diced
2 None pears, 1 1/2 peeled, cored and diced; 1/2 thinly sliced
1 tbsp sugar
2 tbsp lemon juice
1 None cinnamon stick
2/3 cup low-fat yogurt
None None Mint sprigs, for garnish
Preparation

Place the milk, lemon zest and a pinch of salt in a medium saucepan and bring to a boil. Add the rice and return to a boil. Reduce heat and simmer for 25-30 mins until tender, stirring often. Remove from the heat, cover and let stand for 10-15 mins.
Meanwhile, combine 1 cup water, the diced fruit, sugar, lemon juice and cinnamon stick in a separate saucepan. Bring to a boil, then cover, reduce heat and simmer for 12-15 mins until the fruit is tender. Stir in the sliced pear and cook for 3-4 mins.
Fold the yogurt into the rice pudding, then spoon into four bowls. Top with the fruit compote and serve garnished with mint.
