Ingredients

2 1/4 cups granulated sugar
4 (2 inch) strips orange zest
1 None cinnamon stick
1 tbsp orange liqueur
1/2 cup self-rising flour
2 tbsp whole milk powder
1 tbsp cocoa powder
4 oz cream cheese, softened
24 None chocolate-coated raisins
None None vegetable oil, for deep-frying
Preparation

Stir 2 cups water, sugar, orange zest and cinnamon in a medium saucepan over medium heat until sugar dissolves. Bring to a boil. Boil, without stirring, for 5 mins then remove from heat and stir in liqueur. Let cool.
Sift flour, milk powder and cocoa powder into a medium bowl. Add cream cheese and mix until combined. Turn out onto a floured work surface and knead for 10 mins. Roll 1 tsp of dough around each chocolate raisin.
Heat oil in a deep pan or wok until 350\u00b0F. Working in batches, deep-fry gulab jaman for 2 mins, or until browned. Drain on paper towels then place in syrup. Let stand for 1 hour before serving.
