Mini Pavlovas - cooking recipe

Ingredients
    4 None egg whites
    3/4 cup sugar
    1 tsp lemon juice
    1/2 tsp vanilla extract
    1 1/4 cups heavy cream, whipped
    3 None bananas, peeled and sliced
    9 oz strawberries, hulled and quartered
    2 None kiwifruit, peeled and sliced
    4 None passionfruit, pulp only
Preparation
    Preheat the oven to 300\u00b0F. Line 2 baking sheets with parchment paper.
    Beat egg whites in a medium, clean bowl with an electric mixer until soft peaks form.
    Gradually add sugar, 1 tbsp at a time, beating until sugar dissolves and foam is stiff, thick and glossy. Beat in lemon juice and vanilla extract.
    Spoon mixture onto prepared pans to form 8 round nests.
    Bake 10 mins. Reduce oven to 250\u00b0F, and bake a further 20 mins. Allow to cool in a turned-off oven, with the door ajar to fully dry out.
    To serve, top with whipped cream and bananas, strawberries and kiwifruit. Drizzle with passionfruit just before serving.
