Mediterranean Veggie Fritters - cooking recipe

Ingredients
    1 cup self-rising flour
    1/4 tsp baking soda
    3/4 cup 2% milk
    1 None egg, lightly beaten
    1 (7 oz) jar chargrilled vegetables, drained, chopped
    1 None zucchini, grated
    2 tbsp fresh basil leaves, finely shredded
    3.5 oz feta cheese, finely chopped
    None None baby arugula, to serve
    None None sweet chili sauce, to serve
Preparation
    Sift together flour and baking soda. Gradually whisk in milk and egg until smooth. Add vegetables, zucchini, basil and feta. Season. Let rest for 15 mins.
    Heat a large, greased frying pan over medium heat. Drop tablespoonfuls of mixture into pan, leaving space between each to allow for spreading. Cook for 1-2 mins, until bubbles form on the surface. Flip and cook for 1 min. Repeat with remaining batter.
    Top fritters with arugula. Serve with sweet chili sauce.
