Flower Cookies With Jam - cooking recipe

Ingredients
    1/3 cup rice flour, sifted
    1/3 cup flour, sifted
    1/3 cup sugar
    10 tbsp cold butter, chopped
    2 tbsp raspberry or other jam
Preparation
    Preheat oven to 325\u00b0F. Line 2 baking sheets with parchment paper. For the dough, place flours, sugar, butter and a pinch of salt in a food processor and pulse until mixture is combined. Turn out onto a lightly floured work surface and knead into a ball. Roll out to 1/2 inch thickness.
    Using a flower-shaped cookie cutter, cut cookies from the dough. While cutter is still in dough, use your thumb to make a dimple in the center of each flower. Place cookies on prepared baking sheets, leaving a little space between them. Fill dimples with jam. Bake 30 mins, or until lightly golden, switching position of baking sheets halfway through. Cool on baking sheets and serve.
