Ingredients

4 None large oranges, peeled, seeded, chopped
3 3/4 cups sugar, approximately
1 tbsp brandy
1 tbsp brandy
Preparation

Combine orange flesh and 4 cups water in a large saucepan. Bring to a boil, covered, then reduce heat and simmer for 20 mins, or until just tender.
Measure orange mixture. For every 1 cup of mixture, measure out 1 cup sugar. Return orange mixture and sugar to saucepan and stir over medium heat, without boiling, until sugar is dissolved. Boil rapidly, without stirring, for about 20 mins, or until jam jells when tested on a cold saucer. Stir in brandy.
