Butterscotch Pecan Muffins - cooking recipe

Ingredients
    3/4 cup Nestle Dulce de Leche
    2 1/4 cups self-rising flour
    3/4 cup brown sugar
    3/4 cup coarsely chopped roasted pecans
    6 tbsp butter, melted
    1 cup buttermilk
    1 None large egg
Preparation
    Preheat oven to 400\u00b0F. Line a 12-cup muffin pan with paper liners.
    Place dulce de leche in a small saucepan. Stir over low heat until smooth. Let cool for 5 mins.
    Meanwhile, sift flour and sugar into a large bowl. Stir in nuts. Lightly whisk together butter, buttermilk and egg then mix into dry ingredients until just combined. Distribute 1/2 of the batter between paper liners. Pour 1/2 the dulce de leche over muffin batter in pan. Repeat layering. Using a skewer, gently swirl dulce de leche into muffin batter. Bake for 20 mins. Let muffins cool in pan for 5 mins then transfer to a wire rack to cool completely.
