Pan-Fried Pineapple With Honey Cream Sauce - cooking recipe

1/3 cup yogurt
1 tbsp honey
1/2 cup heavy cream
1/2 None pineapple, peeled, halved, core removed and cut into 1/2 inch slices
1 oz dessicated coconut
2 tbsp butter
None None mint leaves, to garnish
Preparation

For the sauce, mix together the yogurt and honey. Beat the cream until soft peaks form, then gently fold into the yogurt mixture. Set aside.
Roll the pineapple slices in desiccated coconut. Melt the butter in a frying pan, add the pineapple and cook on medium, turning once, 3 mins, until golden brown. Arrange on plates with the sauce and garnish with mint leaves.
