Leek, Ham, And Bacon Tart - cooking recipe

4 strips bacon, halved
1 clove garlic, peeled and crushed
1 None large leek, trimmed and sliced (well rinsed)
8 oz ham, diced
1 round 12 inch chilled, ready rolled sheet of puff pastry
4 medium eggs
1 cup milk
2 tbsp cream cheese with herbs
1 tsp dried herbes de Provence
2/3 cup Gouda cheese, grated
Preparation

Preheat the oven to 400\u00b0F. Cook bacon in a pan (with no fat) until crisp. Take out and set aside. Add the garlic to the bacon fat in the pan, then the leeks and cook 5 mins. Add the ham and set aside.
Line a 10 inch loose-based tart pan with the puff pastry, leaving dough overlapping all around the edge. Put the pan on a baking sheet. Prick the base a few times with a fork. Spread the leek and ham mixture over the base. Lay the bacon on top.
Beat the eggs, milk, and cream cheese until smooth. Whisk in the herbs and season. Carefully pour over the filling. Sprinkle with the cheese. Bake on the bottom rack of the oven for about 50 mins. If it starts to brown too much, cover with foil.
Let cool for about 10 mins before taking out of the pan and slicing.
