Spicy Malay Chicken Curry - cooking recipe
Ingredients

1 tbsp peanut oil
1 None large onion, peeled, sliced
1 lb medium Desiree potatoes, peeled, cut into wedges
1 tbsp grated fresh ginger
2 cloves garlic, minced
2 1/4 lb chicken breast fillets, chopped
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp ground tumeric
2 tbsp chopped fresh lemongrass
2 None kaffir lime leaves, finely chopped
4 None small fresh red chilies, seeded, chopped
2 None medium tomatoes, chopped
2 tsp sugar
1 cup coconut cream
1/3 cup peanuts, coarsely chopped
Preparation

Cook potatoes in salted water until tender.
Meanwhile, heat oil in a large saucepan over medium heat. Sweat onion, ginger and garlic, stirring, until onion is soft. Add chicken and cook, stirring, until browned lightly. Stir in spices, lemongrass, kaffir lime leaves and chilies. Cook, stirring, until fragrant. Add cooked potatoes, 1 cup water, tomatoes, sugar and coconut cream. Simmer for 30 mins, or until thickened slightly.
Serve over steamed rice and sprinkled with peanuts.
