Lamb & Apricot Pilaf - cooking recipe

Ingredients
    1 1/2 cups bulgur wheat
    1 cup dried apricots
    1 bunch green onions, trimmed and sliced
    1/3 cup pine nuts
    3 tbsp oil
    1/2 tsp ground cumin
    1/4 cup honey
    1 tsp ground coriander
    2/3 cup lamb stock or beef stock
    1 lb boneless leg of lamb, sliced
    1/2 tsp paprika
    2 tbsp chopped cilantro
Preparation
    Cover bulgur wheat with boiling water and let stand for 30 mins. Drain and toss with 1 tsp salt.
    Heat 2 tbsp of the oil in a medium saucepan on medium heat. Cook apricots, onions and pine nuts for 3-4 mins, stirring, until golden. Add cumin, honey, 1/2 tsp of the ground coriander, stock and bulgur wheat. Cover and cook for 3 mins.
    Toss lamb with paprika, remaining 1/2 tsp ground coriander and salt and pepper. Heat remaining 1 tbsp oil in large skillet on high heat. Cook lamb for 5-8 mins, turning once, until cooked to desired doneness. Add bulgur wheat mixture and cilantro and toss to combine.
