Ingredients

1 1/4 cups sugar
2 None large eggs
1 1/3 cups all-purpose flour, sifted
1/3 cup self-rising flour, sifted
3/4 cup shredded coconut
2 tsp lemon rind, finely grated
2 tsp lime rind, finely grated
2 tsp orange rind, finely grated
Preparation

Preheat oven to 350\u00b0F. Grease a baking sheet.
Whisk together sugar and eggs in a medium bowl until combined. Stir in flours, then coconut and citrus rinds. Knead dough on floured surface until smooth. Divide dough in half and roll each portion into a 12 inch log. Place logs on prepared baking sheet and bake for 30 mins. Cool on baking sheets for 10 minutes. Reduce oven to 300\u00b0F.
Using serrated knife, cut logs diagonally into 1/4 inch slices. Arrange slices, in single layer, on un-greased baking sheets. Bake for 30 mins or until biscotti are dry and crisp, turning halfway through baking. Cool on wire racks.
