Breaded Pork Chops With Caramelized Apple Rings And Apple Sauce - cooking recipe

4 None eating apples, 2 peeled, cored and chopped, 2 cored and cut into rings
2 tbsp creme fraiche
75 g breadcrumbs
1 tsp flaxseed
4 None pork steaks (about 120g each)
1/2 tsp dried sage
50 g plain flour
1 None egg, beaten
4 tbsp oil
2 tsp sugar
Preparation

Core and chop 2 of the apples. Core and cut remaining 2 apples into rings. For the apple sauce, place the chopped apples in a saucepan with 2 tbsp water and simmer until softened. Remove from the heat and mash. Stir in the creme fraiche and season with salt and black pepper. Set aside.
Mix the breadcrumbs and flaxseed in a shallow dish. Season the pork chops with salt and black pepper and sprinkle with the sage. Coat the pork chops in the flour then in the egg and then in the breadcrumbs. Heat 2 tbsp of the oil in a large skillet on medium heat. Fry the pork chops in batches until golden on both sides, adding the remaining oil as needed.
Sprinkle the apple rings on both sides with the sugar. Heat a skillet and cook the apple rings for 2 mins on each side until caramelized. Serve with the pork chops and apple sauce.
