Chilled Tomato Soup With Goat Cheese And Grissini - cooking recipe

1 lb pizza dough
4 tbsp olive oil + 4 tsp
2 1/4 lb ripe tomatoes, coarsely diced
1-2 tbsp honey
1 None lemon, zested and juiced
4 sprigs fresh basil, chopped finely
2 tbsp white wine vinegar
5.25 oz goat cheese
Preparation

Preheat oven to 425\u00b0F. To make the grissini bread sticks, line a baking sheet with parchment paper. Roll out dough and cut into 24 strips. Brush with oil and sprinkle with coarse salt. Transfer to prepared pan and bake for 10 mins.
Meanwhile, puree tomatoes, honey, lemon zest and lemon juice in a blender. Add basil and vinegar, season to taste and chill. Serve in bowls, drizzled with olive oil. Garnish with goat cheese and warm grissini.
