Blueberry Cheesecake Towers - cooking recipe

Ingredients
    3 oz cream cheese
    None None finely grated rind and juice of 1 lemon
    1 tbsp sugar
    4 tbsp sour cream
    4 None blueberry muffins, each cut into 4 horizontal slices
    None None powdered sugar to dust
Preparation
    Place the soft cheese into a small bowl. Add the lemon rind, lemon juice and sugar and mix well.
    Fold in the sour cream. Place in the fridge for 30 mins to chill and firm slightly.
    Sandwich the muffin slices back together with the lemon cheese mixture. Place on a serving plate. Lightly dust with powered sugar to serve.
