Baked Tomatoes On The Vine - cooking recipe

Ingredients
    2 lbs cherry tomatoes on the vine
    2 tbsp balsamic vinegar
    2 tbsp vegetable or olive oil
    2 bunches arugula, trimmed
Preparation
    Preheat the oven to 425\u00b0F. Line a baking pan with foil. Place tomatoes on pan. Drizzle with vinegar and 1 tbsp of the oil. Season.
    Bake for 15 mins or until tomatoes just start to collapse. Use scissors to cut vines into smaller portions.
    Arrange arugula on a serving platter. Top with tomatoes and drizzle with remaining 1 tbsp oil.
