Banana, Cranberry And Macadamia Muffins - cooking recipe

Ingredients
    1 3/4 cups self-rising flour
    1/2 cup sugar
    1.5 oz dried cranberries
    1.5 oz macadamias, toasted and chopped
    5 oz banana, mashed
    1 None large egg, beaten lightly
    2/3 cup milk
    1/3 cup vegetable oil
Preparation
    Preheat the oven to 350\u00b0F. Grease 12-hole muffin pan.
    Combine the flour, sugar, cranberries and nuts in a large bowl. In a separate bowl, beat the banana, eggs, milk and oil until well-combined. Stir wet ingredients into dry ingredients until just combined. Do not overstir; mixture should be lumpy.
    Spoon the mixture into the prepared pan, filling each hole 3/4 full. Bake for 15-17 mins, until a skewer inserted in the center of a muffin comes out clean. Cool in pan for 5 mins before turning out onto a wire rack to cool completely.
