Ham And Potato Hash With Apple Compote - cooking recipe

Ingredients
    2 lb potatoes, peeled
    3 None apples (such as Braeburn), peeled, cored, diced
    5 tbsp apple juice
    2 tbsp oil
    5.25 oz ham, cut into wide strips
    10.5 oz carrots, peeled, sliced
    5 None spring onions, sliced
    3 sprigs fresh marjoram, leaves chopped
Preparation
    Cook potatoes in boiling water for 20 mins. Drain. Let cool then slice.
    Meanwhile, for the apple compote, combine apples and apple juice in a saucepan. Cover and cook over medium heat for 15 mins, until soft. Mash.
    Heat oil in a large nonstick frying pan. Saute ham, potatoes and carrots, turning, for 8 mins, or until golden brown. Add spring onions and season. Distribute between serving plates and sprinkle with marjoram. Serve with apple compote.
