Chargrilled Vegetable And Tuna Rice - cooking recipe

Ingredients
    1 None medium green pepper, seeded, thickly sliced
    1 bunch asparagus, halved
    1 None medium zucchini, thinly sliced lengthwise
    9 oz microwave long-grain brown rice
    1 tsp lemon zest
    1/3 cup lemon juice
    1/4 cup vegetable or olive oil
    1 clove garlic, minced
    3.5 oz baby spinach
    3 (6 oz) cans tuna in spring water, drained, flaked
Preparation
    Preheat a large grill pan over high heat. Working in batches, char-grill vegetables for 2 mins per side, or until just soft. Transfer to a large heatproof bowl.
    Meanwhile, prepare rice according to package directions.
    Whisk together lemon zest, lemon juice, oil and garlic. Season. Add to rice along with spinach, tuna and vegetables and gently toss to combine. Season.
