Raisin Bran Muffins - cooking recipe

Ingredients
    4.25 oz low-fat cottage cheese
    1/2 cup brown sugar
    2 None eggs
    1/2 tsp vanilla extract
    1/2 cup self-rising flour, sifted
    8.75 oz raisin bran breakfast cereal
    1 cup skim milk
    2.5 oz pitted dates, finely chopped
Preparation
    Preheat oven to 350\u00b0F. Line a 12-cup muffin pan with paper liners.
    Combine cottage cheese, sugar, eggs and vanilla. Fold in flour, 3/4 of the cereal, milk and dates. Distribute between paper liners then sprinkle with remaining cereal. Bake for 20-25 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
