Lamb Chops With Stuffed Peppers - cooking recipe

Ingredients
    2 None red peppers
    1 cup ricotta cheese
    1 tbsp chopped parsley
    1 None lemon, peel grated
    1/4 cup grated Parmesan cheese
    2 tbsp finely chopped walnuts
    2 tbsp dried breadcrumbs
    1 tbsp olive oil
    12 None lamb chops
Preparation
    Preheat the oven to 400\u00b0F. Line a baking pan with parchment paper.
    Slice pepper in half lengthwise; remove seeds and membrane. Combine ricotta, parsley and lemon peel in a medium bowl. Season to taste. Spoon mixture evenly into pepper halves. Place peppers on prepared pan.
    Combine Parmesan cheese, walnuts and breadcrumbs. Sprinkle on pepper halves. Bake for 20-25 mins until cooked through and crumbs are golden.
    Meanwhile, heat olive oil in a large skillet on high heat. Cook lamb chops in batches for 2-3 mins each side, or until cooked to desired doneness. Let stand, loosely covered with foil, for 5 mins. Serve with stuffed peppers.
