Roasted Garlic And Chili Eggplant - cooking recipe

Ingredients
    1/4 cup olive oil
    3 medium eggplant, thickly sliced
    2 cloves garlic, thinly sliced
    1/2 tsp red pepper flakes
    1/4 cup chopped parsley
    1/4 cup chopped mint
    1 None lemon, peel finely grated and lemon juiced
Preparation
    Preheat the oven to 400\u00b0F.
    Heat 1 tbsp of the oil in large skillet on medium heat. Cook eggplant in 4 batches for 2-3 mins each side, until lightly browned. Transfer to a large baking dish. Sprinkle with garlic and red pepper flakes. Season to taste.
    Bake for 20-25 mins until eggplant is tender. Serve sprinkled with combined parsley, mint, lemon peel and juice.
