Herbed Mussels - cooking recipe

Ingredients
    2 tbsp olive oil
    2 tbsp fennel seeds
    2 None onions, thinly sliced
    2 cloves garlic, crushed
    1 cup white wine
    2 1/4 lbs mussels, bearded
    4 tbsp parsley, chopped
    4 tbsp dill, chopped
    1 None lemon, zested
    None None Crusty bread, to serve
    None None Lemon wedges, to serve
Preparation
    Heat oil with fennel seeds in a large saucepan over high heat. Cook for 1 min. Add onions and garlic and cook for 2-3 mins, until starting to soften.
    Pour in wine and bring to a boil. Add mussels, reduce heat to medium and cook, covered, for 3-5 mins, shaking pan occasionally.
    Uncover pan and discard any mussels that have not opened. Stir in herbs and lemon zest and season to taste. Serve hot or cold with crusty bread and lemon wedges.
