Sticky Fig And Pecan Muffins - cooking recipe
Ingredients

1 cup dried figs, chopped
1 tsp baking soda
7 tbsp butter, chopped
1/2 cup firmly packed brown sugar
2 None large eggs
1 cup self-raising flour
6 None whole pecans
None None cream or ice cream, to serve
Preparation

Preheat oven to 350\u00b0F. Grease a 6-hole cupcake pan.
In a bowl, combine the figs, baking soda and 3/4 cup boiling water and mix until combined. Let stand for 5 mins. Add the butter and sugar and stir until mixture is almost smooth. Add eggs and flour and stir until just combined.
Spoon into the cupcake pan. Decorate tops with pecans. Bake for 30 mins or until a skewer inserted at center comes out clean. Cool in pan for 5 mins. Transfer to a wire rack to cool. Serve with custard or ice cream.
