Ingredients

1 1/4 cup sugar
1 1/3 cup coconut milk
4 tbsp lemon juice
1 cup heavy whipping cream, whipped to stiff peaks
2 tbsp desiccated coconut
1 tbsp powdered sugar
None None fresh fruit, to serve
Preparation

Place the sugar and 1 cup water in a saucepan and simmer for 5-10 mins, until thickened. Allow to cool. Stir in the coconut milk and lemon juice. Fold in the cream. Freeze overnight.
Scoop into balls and sprinkle with the coconut and powdered sugar. Serve with fresh fruit.
