Spicy Lentil Soup - cooking recipe

Ingredients
    1 tbsp oil
    2 None onions, peeled and finely chopped
    1 None walnut-sized piece fresh root ginger, peeled and finely chopped
    2 cloves garlic, peeled and finely chopped
    500 g red lentils
    1/2 tsp curry powder, plus extra for sprinkling
    1/2 tsp ground cumin
    1/4 tsp ground cardamom
    2.5 litres vegetable stock
    8 tbsp Greek yogurt
    15 g fresh flat-leaf parsley, chopped
Preparation
    Heat the oil in a saucepan and saute the onions, ginger and garlic for 2 mins. Add the lentils, curry powder, cumin and cardamom and saute for 1 min. Pour in the stock and bring to a boil. Simmer over a low heat for 15 mins, stirring frequently. Season with salt and black pepper.
    Ladle into bowls, top each with 1 tbsp yogurt and swirl. Sprinkle with parsley and curry powder.
