Caramelized Onion And Goat Cheese Quiche - cooking recipe

2 tbsp olive oil
2 1/2 tbsp butter
2 None onions, thinly sliced
9 oz roasted red peppers (from a jar), drained
4 oz Cheddar cheese, grated
2 oz goat cheese, crumbled
3 None large eggs
1/2 cup whole milk
2 slices prosciutto, chopped
2 tbsp chopped fresh flat-leaf parsley leaves
2 1/4 cups all-purpose flour
4 1/2 tbsp butter, diced
1 None large egg yolk
1/4 cup lemon juice or water
None None salad, to serve
Preparation

Preheat oven to 350\u00b0F. Lightly grease an 8 inch tart pan.
To make the pastry dough, place flour and butter in a food processor and pulse to combined. Add egg yolk and pulse to combine. With the motor running, gradually add lemon juice or water until dough begins to come together. Wrap in plastic wrap and chill for 15 mins.
Roll pastry out on a lightly floured work surface into a 10 inch circle then use to line prepared tart pan, trimming edges. Chill for 15 mins.
Line tart with parchment paper and fill with baking beans. Blind bake for 10-15 mins, until firm. Remove beans and paper and bake for 5 mins.
Meanwhile, to make the filling, heat oil and butter in a frying pan over high heat. Saute onions until tender and golden. Remove from heat. Arrange in tart shell along with peppers and cheese.
Whisk eggs and milk together and season to taste. Pour into tart shell and sprinkle with prosciutto and parsley. Place on a baking tray and bake for 30-35 mins, until set and browned on top. Serve with salad.
