Beef And Gnocchi Bakes - cooking recipe

1 tbsp olive oil
1 None onion, finely chopped
2 cloves garlic, crushed
1 lb lean ground beef
2 None carrots, peeled and diced
3 cups tomato puree
2 tbsp chopped parsley, plus additional, to serve
12 oz ready-made potato gnocchi
1/2 cup grated Parmesan cheese
1/4 tsp ground nutmeg

Preheat the oven to 425\u00b0F. Heat the oil in a large saucepan on medium heat. Add the onion and garlic and cook for 3-4 mins, until soft. Add the ground beef and carrot and cook, stirring with a wooden spoon to break up any lumps, for 10 mins, until browned. Stir in the tomato puree and bring to a boil. Reduce the heat to low and simmer for 15 mins, until the sauce thickens. Stir in the chopped parsley and season to taste.
Meanwhile, cook the gnocchi in a large saucepan of salted, boiling water for 3-4 mins, until the gnocchi rise to the surface. Use a slotted spoon to remove gnocchi from the boiling water and drain.
Divide the meat mixture among four 1 2/3-cup baking dishes or ramekins. Top with gnocchi. Sprinkle with Parmesan cheese and nutmeg.
Bake for 10-12 mins, until the gnocchi is golden and sauce is bubbling. Sprinkle with additional parsley and serve.
