Clam Chowder - cooking recipe
Ingredients

2 lbs baby clams
2 tbsp coarse cooking salt
2 tbsp butter
1 None onion, coarsely chopped
2 slices bacon, coarsely chopped
1 clove garlic, crushed
2 tbsp flour
3 cups milk, warmed
2 cups vegetable stock, warmed
2 medium potatoes, coarsely chopped
2 tbsp chopped fresh chives
Preparation

Rinse clams under cold water. Place in a large bowl and sprinkle with salt, then cover with water. Let stand 1 hour; rinse and drain.
Meanwhile, melt butter in large saucepan on medium heat. Cook onion, bacon and garlic until onion softens. Add flour to pan and continue stirring until mixture thickens and bubbles. Gradually stir in milk and stock and continue to stir until mixture boils and thickens slightly. Add potato. Reduce heat to low; cover and simmer until potato is tender.
Add clams and simmer, covered, 5 mins or until clams open. Sprinkle chowder with chives.
