Italian Turkey Meat Loaf - cooking recipe

Ingredients
    12 slices prosciutto
    1 tbsp olive oil
    1 None onion, finely chopped
    2 cloves garlic, crushed
    2 lbs ground turkey
    1 cup fresh white breadcrumbs
    1 cup semi-dried tomatoes, chopped
    1/2 cup grated parmesan
    1 None medium egg, lightly beaten
    1/2 cup pine nuts, toasted
    1 tbsp chopped sage
    None None salad leaves, chuntey, crusty bread, to serve
Preparation
    Preheat the oven to 350\u00b0F. Lightly grease two 3 x 10 inch narrow baking pans. Cover bases and sides with prosciutto, allowing it to overhang.
    Heat oil in a small frying pan on medium. Saute onion and garlic 3-4 mins, until tender. Allow to cool.
    In a large bowl, combine ground turkey with onion mixture, breadcrumbs, tomatoes, parmesan, egg, nuts and sage. Season to taste.
    Spoon mixture evenly between pans, folding prosciutto ends over. Bake 35-40 mins, until cooked through.
    Drain juices from pan and remove meat loaves. Serve sliced with salad leaves, chutney and bread.
