Garlic And Lemon Chicken - cooking recipe

Ingredients
    1 None chicken (about 1.5kg)
    2 None lemons, halved, 1/2 juiced
    1 bulb garlic, halved
    4 sprigs fresh rosemary
    1 kg new potatoes, cut into wedges
    3 tbsp olive oil
    1 tbsp butter
    2 tsp runny honey
Preparation
    Preheat oven to 400\u00b0F. Grease a roasting pan. Season chicken inside and out then stuff with 1/2 lemon, 1/2 garlic bulb and 1 sprig rosemary. Pin cavity closed with wooden skewer and tie legs with butcher's twine. Roast for 30 mins. Spread potatoes around chicken, drizzle with 2 tbsp olive oil and season. Mix melted butter and honey with 1 tbsp olive oil and 2 tbsp lemon juice. Brush over chicken then roast for another 15 mins. Add remaining rosemary, lemon and garlic and brush with marinade again. Roast for 15 mins. Brush with marinade again and roast for 15 mins or until juices run clear.
