Caramelized Onion And Olive Toasts - cooking recipe

Ingredients
    3 tbsp butter
    1 tbsp olive oil
    3 large onions, thinly sliced
    2 cloves garlic, crushed
    2 sprigs thyme, plus additional leaves, for serving
    1 loaf ciabatta
    10 None drained anchovy fillets, halved lengthwise
    1/2 cup pitted black olives
Preparation
    Heat the butter and oil in a large skillet on low heat. Add the onion, garlic and thyme; cover and cook, stirring occasionally, for about 30 mins or until the onion is very soft. Check every so often that the pan isn't running dry; add a little more butter and oil as needed. Cook, uncovered, for a further 10 mins. Remove the thyme sprigs.
    Preheat the oven to 400\u00b0F.
    Split the bread lengthwise and place cut side up on a baking pan. Spread the onion mixture on the bread. Top with anchovies.
    Bake for about 15 mins or until the bread is crisp. Top with olives before serving. Sprinkle with additional thyme, if desired.
