Beef With Soy Sauce And Vegetables - cooking recipe

8 oz long grain rice
1 1/2 lb sirloin steak
4 tbsp sunflower oil
3 None carrots, cut into matchsticks
2 None onions, chopped
3 cups beef or vegetable stock
2 tsp cornstarch
4-5 tbsp soy sauce
1 cup arugula
Preparation

Cook the rice according to the package instructions.
Season the beef and cut it into strips. Heat 2 tbsp of the oil in a frying pan and cook the beef for 4 mins, stirring. Transfer to a plate. Add the carrots and onions to the pan and saute for 5 mins.
In a separate pan, mix 2 tbsp of the stock with the cornstarch. Add the rest of the stock and the soy sauce and bring to a low boil. Add the carrots and onions and cook gently for 4-5 minutes until tender. Add the beef and rice and heat through. Season to taste, adding more soy sauce if needed. Toss with the arugula and serve immediately.
