3 None eggs
3/4 cup plus 4 tsp sugar
1/2 tsp vanilla extract
None None Finely grated zest of 1 orange
2/3 cup all-purpose flour
1/2 tsp baking powder
1 tsp ground ginger
1 cup mixed nuts
1/2 cup candied ginger, chopped
3 1/2 oz dark chocolate, melted
3 1/2 oz white chocolate, melted
Preparation

Preheat oven to 350\u00b0F. Lightly grease and line a baking sheet with parchment.
In a large bowl, using an electric mixer, beat eggs and sugar together until pale and creamy. Beat in vanilla and zest.
Sift flour, baking powder, and ground ginger together onto a piece of parchment. Fold into butter mixture with nuts and candied ginger.
Divide mixture in half. Roll into two 2-inch-thick logs. Place on baking sheet. Bake 20-25 minutes, until lightly golden. Leave on tray to cool completely (or overnight).
Cut logs into thin, diagonal slices. Arrange in single layer on baking sheet. Bake 10 minutes on each side. Transfer to a wire rack to cool.
Dip one end of each biscuit into either dark or white chocolate and allow to set. Serve with coffee.
