No-Bake Lime Cheesecake - cooking recipe

Ingredients
    1 cup walnuts, chopped, toasted
    1/2 cup pitted dates
    1/3 cup sweetened shredded coconut
    3 None limes, 1 sliced into half moons, 2 juiced
    1 (1/4 oz) package unflavored gelatin
    3 (8 oz) packages Neufchatel cheese, softened
    1 1/4 cups sugar
    2 cups low-fat Greek yogurt
    1 cup low-fat Cool Whip
    1 None lemon, sliced into half moons
    1/2 cup raspberries
Preparation
    In a food processor, pulse walnuts, dates, and coconut together until finely chopped. Transfer to a greased 8 inch springform pan and press into base and sides of pan. Arrange lime slices around pan. In a small bowl, bloom gelatin in 2 tbsp cold water for 2 mins. Microwave for 30 seconds.
    In an electric mixer on medium speed, beat cheese and sugar for 1 min, or until smooth. Beat in yogurt and 1/3 cup lime juice. Stir in melted gelatin then transfer to pan and smooth top. Chill for 4 hours, or overnight.
    Transfer whipped cream to a piping bag and use to decorate top of cake. Garnish with lemon and remaining lime slices. Sprinkle with raspberries.
