Baked Mascarpone Pears - cooking recipe
Ingredients

2/3 cup sweet white wine
1/2 cup granulated sugar
4 None ripe pears, halved, core removed with a melon baller
8.75 oz mascarpone cheese
2 oz dried apricots
2 tbsp demerara sugar
6 None amaretti cookies, roughly crushed

Preheat oven to 350\u00b0F.
Combine wine, sugar and 2/3 cup water in a saucepan and heat gently until sugar dissolves. Add pears, cover and simmer for 10-15 mins, until just softened. Set aside to cool. Transfer pears to a baking sheet, cut-side up. Reserve syrup.
Meanwhile, combine mascarpone, apricots and demerara sugar. Distribute over pears and sprinkle with amaretti cookies. Bake for 15 mins, until amaretti are just beginning to toast. Serve warm with reserved syrup.
