Pork Ribs With Chorizo And Smoked Paprika - cooking recipe

Ingredients
    4 cloves garlic, crushed
    2 tsp smoked paprika
    2 tbsp olive oil
    3 1/3 lbs pork ribs, separated into individual ribs
    7 oz chorizo, thinly sliced
    1 medium red onion, coarsely chopped
    1 medium red pepper, seeded and coarsely chopped
    1 tbsp brown sugar
    2 cans (14 oz each) diced tomatoes
    1 cup chicken stock
Preparation
    Preheat the oven to 325\u00b0F. Combine garlic, paprika and half the olive oil in a small bowl; rub over ribs.
    Heat a large skillet on high heat. Cook chorizo, stirring, until lightly browned. Remove with a slotted spoon and place to one side of a foil-lined baking pan.
    Add ribs to the skillet and cook until well browned all over. Remove with tongs and place in the baking pan with the chorizo.
    Add remaining olive oil, onion and pepper to the skillet. Cook, stirring, until onion is soft. Return chorizo to the skillet. Add sugar, tomatoes and stock; bring to a boil. Spoon over the ribs. Cover tightly with foil.
    Bake for 1 hour. Remove foil. Bake for 30 mins, or until ribs are tender. Season to taste with salt and black pepper.
