Eggplant Towers - cooking recipe

Ingredients
    6-9 tbsp olive oil
    12 sprigs rosemary
    2 None eggplants, cut into 24 slices
    3-4 None beefsteak tomatoes, cut into 12 thick slices
    1 None onion, peeled and sliced into thin rings
    3/4 lb buffalo mozzarella, cut into 12 slices
    2-3 stems basil
Preparation
    Preheat the broiler. Mix the olive oil and half of the rosemary. Coat the eggplants with the mixture and season with salt. Broil the eggplant slices for 4-5 mins on one side. Turn half of them and broil the other sides, removing the rest from the grill. Put a slice of tomato, some onions, a slice of mozzarella and some basil on the eggplant slices that are grilled on both sides. Cover each tower with the remaining eggplant slices, with the uncooked side up. Broil for about 4 mins. Serve 2 towers per plate and garnish with the remaining rosemary.
