Lemongrass, Ginger And Sesame Bars - cooking recipe
Ingredients

1/2 cup butter, softened
2/3 cup palm sugar, grated
1/2 tsp ground cardamom
1/2 tsp ground cinnamon
1 pinch ground nutmeg
1 pinch ground cloves
2 None large egg yolks
1 2/3 cups all-purpose flour, sifted
4 inches fresh lemongrass, finely chopped
2 tbsp finely chopped candied ginger
32 None sesame crackers, trimmed to same size as cookies
Preparation

In a stand mixer, beat butter, sugar, spices and egg yolks until smooth. Stir in flour, lemongrass and candied ginger. Transfer to a floured work surface and knead until smooth. Roll dough out until 1/4 inch thick then chill for 30 mins.
Preheat oven to 325\u00b0F. Grease 2 baking trays and line with parchment paper.
Cut dough into 16 (3 1/2 inch) squares then cut in each square in 1/2 to make 32 rectangles. Arrange about 2 inches apart on prepared trays and bake for 12 mins.
Top each hot cookie with a sesame snap and bake for 3 mins. Let cool on trays.
