Mini White Chocolate And Raspberry Cakes - cooking recipe

Ingredients
    6 tbsp butter, chopped, at room temperature
    2/3 cup sugar
    1 tsp vanilla extract
    2 None large eggs
    3/4 cup self-rising flour, sifted
    1/3 cup ground almonds
    1/2 cup milk
    6 oz white chocolate, finely chopped, plus extra, grated, to serve
    None None whipped cream and raspberries, to serve
Preparation
    Preheat oven to 350\u00b0F. Lightly grease 4 cups of a large-cup muffin pan.
    For the batter, cream butter, sugar and vanilla together with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Fold in flour, ground almonds and milk. Fold in white chocolate. Use to fill the muffin cups 2/3 full. Bake 20-25 mins, until a skewer come out clean. Cool in pan 5 mins. Serve warm topped with cream, raspberries and grated chocolate.
