Apple And Cider Chicken With Chive Mashed Potatoes - cooking recipe

2 lbs Idaho potatoes, cut into chunks
2 tbsp sunflower oil
2 large chicken breasts, each about 8 oz
1 None apple, cored and cut into thin wedges
1/2 cup hard cider
2 tbsp sour cream
3 tbsp butter
1/2 cup milk
1 good pinch freshly grated nutmeg
3 tbsp chopped chives, plus extra chives to garnish
Preparation

Cook the potatoes in boiling, salted water for 20 minutes or until tender. While cooking, slice each chicken breast in half horizontally and season with salt and pepper.
Heat the oil in a frying pan and cook the chicken for about 4 minutes on each side until cooked through. Lift out onto a plate. Add the apples to the pan and cook lightly on each side to soften. Stir in the cider and sour cream and heat through gently. Return the chicken to the pan and heat through for 2 minutes.
Drain the potatoes and return to the pot. Add the butter, milk, nutmeg and chives and mash well. Transfer to serving plates with the chicken, apples and sauce and garnish with chives.
