Prosciutto Pepper Beef Tenderloin - cooking recipe

Ingredients
    2 1/4 lbs beef tenderloin steaks
    1 tbsp olive oil
    1 tbsp cracked black pepper
    3 sprigs thyme, chopped
    1 None lemon, finely grated zest
    8 slices prosciutto
    1/2 cup red wine
    None None Roasted vegetables, to serve
    None None Wholegrain mustard, to serve
Preparation
    Preheat oven to 350\u00b0F.
    Rub beef with oil. Cover with combined pepper, thyme and lemon zest, pressing firmly. Wrap the prosciutto around the beef, slightly overlapping.
    Place beef in a roasting pan, with the ends of the prosciutto underneath. Pour over red wine.
    Roast for 35-40 mins, or until cooked to taste. Rest, covered, for 5-10 mins.
    Slice and serve with roasted vegetables and wholegrain mustard.
